Spanakopita

Ingredients
- 2 bunches fresh spinach
- 2 cloves garlic diced
- 1 bunch flat parsley chopped
- 2 tsp dill weed
- 1 tsp lemon zest
- 350 g feta cheese
- 4 eggs
- 1 medium onion diced
- 1 package phyllo pastry
- 1/4 cup butter melted
Instructions
- Blanch and drain the spinach.
- Stir together the spinach, garlic, parsley, dill, lemon, feta, eggs, and onion. Mix well.
- Cut the phyllo pastry into 10 cm wide strips. Lay a strip on the cutting board and brush one side with melted butter. Add 2-3 tbsp of the filling, and fold into triangles. Place on a baking tray.
- Bake at 375 °F until golden brown, about 19 minutes.
