Ingredients

  • 2 bunches fresh spinach
  • 2 cloves garlic diced
  • 1 bunch flat parsley chopped
  • 2 tsp dill weed
  • 1 tsp lemon zest
  • 350 g feta cheese
  • 4 eggs
  • 1 medium onion diced
  • 1 package phyllo pastry
  • 1/4 cup butter melted

Instructions

  • Blanch and drain the spinach.
  • Stir together the spinach, garlic, parsley, dill, lemon, feta, eggs, and onion. Mix well.
  • Cut the phyllo pastry into 10 cm wide strips. Lay a strip on the cutting board and brush one side with melted butter. Add 2-3 tbsp of the filling, and fold into triangles. Place on a baking tray.
  • Bake at 375 °F until golden brown, about 19 minutes.
