Shrimp Avocado Mango Salad with Cilantro Lime Dressing
Ingredients
Shrimp
- 450 g shrimp 31-40, peeled and deveined
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp chili powder
Cilantro Lime Dressing
- 25 g red onion 3 tbsp
- 1 clove garlic
- 1 cup cilantro
- 55 g olive oil 1/4 cup
- 30 g lime juice 2 tbsp
- 30 g red wine vinegar 2 tbsp
- 21 g honey 1 tbsp
- 10 g Dijon mustard 2 tsp
- 1/4 tsp salt
- 1/4 tsp cumin
- 1/8 tsp paprika
Avocado Mango Salad
- 8 cups green leaf lettuce chopped
- 1 mango 400 g (200 g peeled and sliced)
- 2 avocados 450 g (300 g peeled and sliced)
- 50 g red onion 1/2 cup, sliced
- 3/4 cup cherry tomatoes halved
Instructions
Cilantro Lime Dressing
- Put all the ingredients for the dressing other than the olive oil together in the food processor.
- Pulse until the cilantro is well chopped.
- Add the olive oil while pulsing the food processor.
- Set the cilantro lime dressing aside.
Shrimp
- Mix together the shrimp and the spices.
- In a skillet over medium-high heat, cook the shrimp for about 2 minutes.
- Set the cooked shrimp aside.
Avocado Mango Salad
- Mix together the lettuce, mango, avocados, red onion, and cherry tomatoes.
- Serve the salad, topped with the cooked shrimp and the cilantro lime dressing.
