Shredded Jerk Pork
Ingredients
- 2 kg pork shoulder roast
- 4 tbsp jerk seasoning
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1/2 tbsp salt
- 1 yellow onion 300 g, chopped
- 4 cloves garlic 16 g, minced
- 250 mL chicken broth 1 cup
- 125 mL orange juice 1/2 cup
- 65 mL soy sauce 1/4 cup
- 20 g brown sugar 2 tbsp
- 30 g apple cider vinegar 2 tbsp
Instructions
- In a small bowl, combine the jerk seasoning, garlic powder, onion powder, and salt.
- Rub the sauce all over the pork shoulder roast, and place the roast in the middle of a slow cooker.
- Place the chopped onion in the slow cooker, arranged around the pork roast.
- In a medium bowl, combine the minced garlic, chicken broth, orange juice, soy sauce, brown sugar, and apple cider vinegar. Pour over the pork and onion.
- Cover the slow cooker, and cook on high for 3-4 hours, or on low for 6-8 hours.
- Cut the pork into 2 cm cubes, and mix it back into the sauce.
- Serve over rice and beans.
