Shredded Jerk Pork

Ingredients

  • 2 kg pork shoulder roast
  • 4 tbsp jerk seasoning
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1/2 tbsp salt
  • 1 yellow onion 300 g, chopped
  • 4 cloves garlic 16 g, minced
  • 250 mL chicken broth 1 cup
  • 125 mL orange juice 1/2 cup
  • 65 mL soy sauce 1/4 cup
  • 20 g brown sugar 2 tbsp
  • 30 g apple cider vinegar 2 tbsp

Instructions

  • In a small bowl, combine the jerk seasoning, garlic powder, onion powder, and salt.
  • Rub the sauce all over the pork shoulder roast, and place the roast in the middle of a slow cooker.
  • Place the chopped onion in the slow cooker, arranged around the pork roast.
  • In a medium bowl, combine the minced garlic, chicken broth, orange juice, soy sauce, brown sugar, and apple cider vinegar. Pour over the pork and onion.
  • Cover the slow cooker, and cook on high for 3-4 hours, or on low for 6-8 hours.
  • Cut the pork into 2 cm cubes, and mix it back into the sauce.
  • Serve over rice and beans.
