Quinoa Salad

Ingredients

  • 1 1/4 cup quinoa 225 g
  • chicken bouillon
  • 2 avocados
  • 2 cups grape tomatoes halved
  • 2 cups pecans 225 g, chopped
  • 1 cup dried cranberries 150 g
  • 1 cup cilantro chopped
  • 1/3 cup red onion 75 g, chopped
  • 1 cup red bell pepper chopped
  • 1 lemon zested
  • salt
  • pepper

Instructions

  • Cook the quinoa according to the directions, but using chicken bouillon instead of water.
  • Let the quinoa cool down, then add the other ingredients except the tomatoes and avocado.
  • Add salt and pepper to taste.
  • Serve chilled. Add the tomatoes and avocado just before serving.
