Pickled Red Onion

Ingredients

  • 1 red onion large
  • 2 cups white vinegar 500 mL
  • 2 cups water 500 mL
  • 1/3 cup cane sugar 65 g
  • 2 tbsp sea salt
  • 2 cloves garlic crushed
  • 1 tsp black peppercorns

Instructions

  • Thinly slice the red onions. It is much easier to use a mandolin to slice the onions thinly and consistently.
  • Heat the vinegar, water, sugar, and salt until the sugar and salt dissolve entirely. Let cool.
  • Put the sliced onions, garlic, and peppercorns into a 500 mL mason jar. Pour the vinegar, water, sugar, and salt mixture over the onions. Cover the jar, and shake well to mix.
  • Let sit 1-24 hours before serving. The onions will be bright pink and tender to the bite.
