Green Rice

Ingredients

  • 3 tbsp olive oil
  • 1.5 cups long grain rice
  • 3 cups vegetable broth
  • 1.5 cups baby spinach
  • 0.5 cups cilantro
  • 1 jalapeño
  • 1 shallot
  • 1 clove garlic
  • 1/4 tsp salt

Instructions

  • Blend together the spinach, cilantro, jalapeño, shallot, garlic, salt, and 1/2 cup of the vegetable broth.
  • Heat the oil in a pot over medium heat. Add the rice, and brown quickly.
  • Add the green purée to the rice, and stir well.
  • Add the remaining 2.5 cups of vegetable broth. Bring to a boil, then reduce heat to low.
  • Cover the pot and simmer for 35 to 40 minutes.
