Green Rice
Ingredients
- 3 tbsp olive oil
- 1.5 cups long grain rice
- 3 cups vegetable broth
- 1.5 cups baby spinach
- 0.5 cups cilantro
- 1 jalapeño
- 1 shallot
- 1 clove garlic
- 1/4 tsp salt
Instructions
- Blend together the spinach, cilantro, jalapeño, shallot, garlic, salt, and 1/2 cup of the vegetable broth.
- Heat the oil in a pot over medium heat. Add the rice, and brown quickly.
- Add the green purée to the rice, and stir well.
- Add the remaining 2.5 cups of vegetable broth. Bring to a boil, then reduce heat to low.
- Cover the pot and simmer for 35 to 40 minutes.
