Chimichurri

Ingredients

  • 210 g olive oil
  • 60 g red wine vinegar
  • 6-8 cloves garlic finely chopped
  • 50 g flat leaf parsley about 1 cup, chopped
  • 1 red chili finely chopped
  • 1/2 tbsp dried oregano
  • 2 tsp salt
  • 1 tsp black pepper

Instructions

  • Combine all the ingredients, and mix well. Store in the refrigerator.
  • Tastes best after sitting for 2-24 hours.
