Short Crust

  • 1 cup flour
  • 1/4 tsp salt
  • 1/2 cup cold unsalted butter cut into thin pieces
  • 4-6 tbsp ice cold water


  • Using a pastry blender, mix flour, butter and salt until it resembles a coarse meal.
  • Add ice water, 1 tbsp. at a time, and mix until combined.
  • Wrap dough in plastic and refrigerate at least 2 hours (and ideally overnight).
  • Bring dough to room temperature.
  • Lightly flour the counter and the dough. Roll out into a 12" diameter circle.
