Thai Chicken with Basil

Ingredients

  • 500 g boneless skinless chicken breast
  • 2 tbsp canola oil
  • 6 cloves garlic 30 g
  • 4 jalapeños 110 g
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • corn starch
  • 1/4 cup fresh Thai basil chopped
  • 1/4 cup fresh mint chopped
  • 4 loaves naan bread

Instructions

  • Cut chicken breast into 2 bytes pieces.
  • Peel and dice the garlic.
  • Seed and dice the jalapeños. You should end up with about 85 g.
  • Heat oil in wok or 12-inch skillet over medium-high heat. Cook garlic and jalapeños in oil, stirring constantly, until garlic is golden brown.
  • Add chicken, fish sauce, and sugar, and cover with a lid. Stir-fry 8-10 minutes or until chicken is fully cooked.
  • If there is still lots of liquid, add corn starch to thicken the sauce.
  • Garnish with basil and mint. Serve with naan bread.
