Quinoa Salad
Ingredients
- 1 1/4 cup quinoa
- 2 avocados
- 2 cups grape tomatoes halved
- 2 cups pecans chopped
- 1 cup dried cranberries
- 1/2 cup cilantro chopped
- 1/4 cup red onion chopped
- 1 cup red bell pepper chopped
- 1 lemon zested
- salt
- pepper
Instructions
- Cook the quinoa according to the directions, but using chicken bouillon instead of water.
- Let the quinoa cool down, then add the other ingredients.
- Add salt and pepper to taste.
- Serve chilled.
