Pie Crust

Servings: 2 tops and bottoms

Ingredients

  • 5 cups flour
  • 1 pound shortening
  • 3/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 cup very cold water

Instructions

  • Mix dry ingredients well.
  • Cut in shortening with 2 knives.
  • Work well with pastry blender (don't overwork it).
  • Add water, work in with pastry blender. You may need to add up to 1 3/4 cups (or even 2 cups) of cold water before the pastry reaches the appropriate texture.
  • Leave outside on cupboard in plastic bag overnight.
