Mussels in White Wine Sauce

Ingredients
- 1 kg mussels
- 1 cup dry white wine
- 1/4 cup shallots, minced
- 1/2 cup parsley, chopped
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 baguette
Instructions
- Boil wine, shallots, parsley, and garlic. Simmer for 3 minutes.
- Add mussels and boil, covered, shaking pan several times, for 4-8 minutes or until mussels open up. Remove mussels from liquid.
- Add butter to sauce to make an emulsified sauce. Pour over mussels and serve with crusty bread and chilled white wine.
