Morning Glory Muffin
Ingredients
- 4 cups flour
- 2 cups sugar
- 4 tsp baking soda
- 4 tsp cinnamon
- 1 tsp salt
- 4 cups finely grated carrots
- 1 cup raisins
- 1 cup chopped walnuts
- 1 cup sweetened coconut
- 3 grated apples
- 6 eggs lightly beaten
- 2 cups vegetable oil
- 4 tsp vanilla
Instructions
- Preheat oven to 350F.
- Mix flour, sugar, baking soda, cinnamon and salt.
- In another bowl, mix carrots, raisins, walnuts, coconut, and apple.
- Mix wet ingredients into dry ingredients.
- Mix eggs, oil and vanilla in, until just mixed.
- Bake at 350F for 20-30 minutes. A toothpick stuck into the middle of the muffin should come out clean.
