Mandarin Chicken and Rice Recipe

Mandarin Chicken and Rice


  • 2 chicken breasts diced and cooked
  • 2 cups cooked rice
  • 1 diced red pepper
  • 4-5 chopped green onions
  • 284 mL can of broken mandarin slices
  • 1/3 cup mayonnaise
  • 1/4 tsp ginger


  • In a small bowl, mix together the mayonnaise, ginger, mandarin slices, and 2 tbsp. of the juice from the mandarin slices.
  • In a large bowl, mix together the other ingredients.
  • Add the mayonnaise mixture to the large bowl. Mix well.
  • Chill and serve.
