Mandarin Chicken and Rice
- 2 chicken breasts diced and cooked
- 2 cups cooked rice
- 1 diced red pepper
- 4-5 chopped green onions
- 284 mL can of broken mandarin slices
- 1/3 cup mayonnaise
- 1/4 tsp ginger
- In a small bowl, mix together the mayonnaise, ginger, mandarin slices, and 2 tbsp. of the juice from the mandarin slices.
- In a large bowl, mix together the other ingredients.
- Add the mayonnaise mixture to the large bowl. Mix well.
- Chill and serve.
