Kale Salad with Tahini Dressing

Ingredients

  • 1 bunch of kale
  • 1 avocado cut into chunks
  • 4-6 carrots cut into slivers
  • 2 tsp sesame seeds
  • Salt
  • 1/4 cup tahini
  • 1 tbsp white miso
  • 1.5 tbsp rice vinegar
  • 1/2 tsp sesame oil
  • Pinch red pepper flakes
  • 1/4 cup chopped cilantro
  • 1/3 cup water
  • Dash of soy sauce optional

Instructions

  • Wash and tear up the kale. Sprinkle with salt, and massage the leaves.
  • Wisk together the dressing ingredients.
  • Coat the kale with the dressing, and let sit for 10 minutes.
  • Add the carrot, avocado, and sesame seeds to the kale.
