Kale Salad with Tahini Dressing
Ingredients
- 1 bunch of kale
- 1 avocado cut into chunks
- 4-6 carrots cut into slivers
- 2 tsp sesame seeds
- Salt
- 1/4 cup tahini
- 1 tbsp white miso
- 1.5 tbsp rice vinegar
- 1/2 tsp sesame oil
- Pinch red pepper flakes
- 1/4 cup chopped cilantro
- 1/3 cup water
- Dash of soy sauce optional
Instructions
- Wash and tear up the kale. Sprinkle with salt, and massage the leaves.
- Wisk together the dressing ingredients.
- Coat the kale with the dressing, and let sit for 10 minutes.
- Add the carrot, avocado, and sesame seeds to the kale.
