Jerk Pork
Ingredients
- 1 cup chopped onion
- 1 tsp thyme
- 1 tsp allspice
- 1 tsp ground coriander
- 2 tsp brown sugar
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 1 tsp sriracha sauce
- 1 tsp ground black pepper
- 2 tbsp soy sauce
- 1 tbsp veg. oil
- 2 tbsp lime juice
- salt
- Up to 1/4 cup water optional
- 2 lb pork cut into 2 cm chunks
Instructions
- Combine all ingredients except pork and salt in a food processor and blend until pureed. If too thick add up to quarter cup water. The marinade should be thick but not so paste-like that it won't cover the chicken.
- Marinate the pork for about 4 hours or overnight in fridge.
- Preheat oven to 325F. Season pork lightly with salt. Place in a 9" pan with all the marinade. Bake until done, about 40 minutes.
- Serve with rice, covered in pineapple salsa.
