Jerk Pork

Ingredients

  • 1 cup chopped onion
  • 1 tsp thyme
  • 1 tsp allspice
  • 1 tsp ground coriander
  • 2 tsp brown sugar
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1 tsp sriracha sauce
  • 1 tsp ground black pepper
  • 2 tbsp soy sauce
  • 1 tbsp veg. oil
  • 2 tbsp lime juice
  • salt
  • Up to 1/4 cup water optional
  • 2 lb pork cut into 2 cm chunks

Instructions

  • Combine all ingredients except pork and salt in a food processor and blend until pureed. If too thick add up to quarter cup water. The marinade should be thick but not so paste-like that it won't cover the chicken.
  • Marinate the pork for about 4 hours or overnight in fridge.
  • Preheat oven to 325F. Season pork lightly with salt. Place in a 9" pan with all the marinade. Bake until done, about 40 minutes.
  • Serve with rice, covered in pineapple salsa.
