Jalapeño Poppers

Ingredients

  • 15 jalapeño peppers, halved lengthwise and seeded
  • 250 g cream cheese, softened
  • 250 g cheddar cheese or Monterrey Jack
  • 65 g mayonnaise 1/4 cup
  • 1/2 cup cilantro chopped
  • 25 g bacon bits 1/4 cup, 3 thick slices
  • 1/2 tsp cayenne pepper
  • 1/2 tsp chili powder

First Breading

  • 2 eggs beaten
  • 250 g milk 1 cup
  • 125 g flour 1 cup
  • 2 tsp cayenne pepper
  • 2 tsp paprika
  • 2 tsp thyme
  • 1 tbsp garlic powder

Second Breading

  • 250 g panko

Instructions

  • Preheat oven to 350 °F (175 °C). Lightly grease a medium baking sheet.
  • In a medium bowl, mix together cream cheese, Cheddar cheese, mayonnaise, chopped cilantro, cayenne, bacon bits, and chili powder.
  • Stuff jalapeño halves with the mixture.
  • Whisk together the eggs and milk in a small bowl.
  • In another small bowl, mix together the flour, cayenne pepper, paprika, thyme, and garlic powder.
  • Dip each stuffed jalapeño half into the egg and milk mixture, then roll in the flour mixture to coat.
  • Let the jalapeños dry for 10 minutes.
  • Place the panko In another small bowl.
  • Dip each stuffed jalapeño half into the egg and milk mixture, then roll in the panko.
  • Arrange the jalapeños in a single layer on the prepared baking sheet. Bake in the preheated oven 30 minutes, or until filling is bubbly and lightly browned.
