- 6 sweet bell peppers, chopped
- 1 English cucumber, chopped
- 1 cup kalamata olives
- 1 red onion, chopped
- 2 cups feta cheese, crumbled
- 3 tbsp olive oil
- 1.5 tbsp red wine vinegar
- 1 tsp dried oregano
- Chop the peppers, cucumber, and onion ahead of time and put in fridge.
- Make dressing and crumble feta cheese ahead of time.
- Add dressing, feta cheese, and kalamata olives to pepper mix about 1 hour before eating.
