Greek Pasta Salad
Ingredients
Salad
- 2 cups penne pasta 200 g
- 10 cherry tomatoes halved
- 1 small red onion chopped
- 1 green bell pepper chopped
- 1 red bell pepper chopped
- 1/2 cucumber sliced
- 1/2 cup sliced black olives
- 1/2 cup crumbled feta cheese
Dressing
- 2/3 cup extra-virgin olive oil 150 g
- 1/4 cup red wine vinegar 60 g
- 1 tbsp lemon juice 15 g
- 2 cloves garlic crushed
- 2 teaspoons dried oregano
- salt to taste
- black pepper to taste
Instructions
- Cook the pasta until tender but firm (about 11 minutes). Rinse with cold water and drain in a colander.
- Whisk together the olive oil, vinegar, lemon juice, garlic, oregano, salt, and pepper, then set the dressing aside.
- In a large bowl, combine the rest of the ingredients in a bowl. Pour in the dressing, and mix well.
- Cover and chill for 3 hours before serving.
